Irish Boxty (potato pancake)
1 lb potatoes cooked for mashing
1 lb peeled grated potatoes
1 tsp salt
Pepper
1/4 tsp baking soda
1 large egg
1 cup flour
1 cup buttermilk
4 scallions thinly sliced (or finely chopped onion)
A large handful of shredded cheese
In a medium bowl mix: flour, salt, pepper, and baking soda; set aside.
Peel and chunk up 1 lb potatoes and boil until fork tender. (Or pierce potatoes and microwave for 4-6 mins, wrap in a kitchen towel for 5 mins and then peel). Mash potatoes until smooth.
Grate 1 lb potatoes onto a kitchen towel. Gather the towel around grated potatoes and squeeze out the water. Add to the mashed potatoes, mix well with hands.
Add the egg, scallions and cheese. Mix well by hand.
Add the flour mixture stirring with a wooden spoon or spatula. Slowly incorporate the buttermilk, mix into a thick pancake type batter.
Heat a non stick pan or cast iron skillet over medium (checking to make sure it doesn’t get too hot). Melt about 1-2 TBS butter (repeat for each batch you make). Put aprox 1/4 cup of the batter onto hot buttered pan and spread to abt 1/2 inch cook for 5-6 mins and flip cooking for another 5-6 mins.
Eat right away or keep warm in a 175° oven to serve all at once.
Serve with any of these: bacon, sausages, ham, eggs, sour cream, cheese.
