Oyster Fact Friday: Oysters grow in particular environments — typically in places where fresh river water mixes with the salty ocean water like estuaries, coves, and bays. This creates a perfect saltinity (2-3%)

🌊This environment is ideally offshore reefs, barrier islands, and peninsulas which prevent waves and storms from sweeping the oysters away.

🦪Oysters almost always bear the name of the region where they are grown, as a means to distinguish their individual flavor.

Yesterday, another senseless and horrific act of violence was committed, and this time it was in our hometown. It’s heartbreaking, and our love and support go out to those most affected. To the families who lost loved ones. To our police force that lost one of its own. And to the rest of us in Boulder and across the country trying to once again understand how something like this can happen. There are ways forward, ways to fix what’s broken, and we hope that we can find the courage and the unity needed to take those steps.

Thank you to our brave first responders who put themselves in harm’s way yesterday and every day. We love you, Boulder.

Oyster Fact Friday: Every time you eat an oyster, you're actually helping the environment.

As far as seafood goes, they're one of the most sustainable options out there! 🦪 Oysters are keystone species (meaning they have an outsize effect on their environment). They filter up to 50 gallons of water a day, cleaning the water, and they sequester carbon from the atmosphere.
🌊While every bit of seafood at Jax Fish House is sustainable, oysters are a particularly Earth-friendly choice...so dig in!🌎
