Chilaquiles Divorciados. One half is tossed in creamy salsa verde and topped with scramble, pinto beans, and Fresno chiles. The other half is tossed in mole chichilo and topped with smoked oyster mushrooms and shredded pibil porq. The whole thing is finished off with crema and our queso fresco.

We made soooo many of my favorite enchiladas this weekend for www.thevegantaste.com. I was happy we had a couple leftover!
