What better way to wrap up Earth Month than with a bowl full of greens? 🥗 Give this green goddess salad a try and let us know what you think 💚🌎

Salad base:
1/4 green cabbage
1 small head of lettuce
2 cucumbers
Dressing:
1 packed cup fresh basil
Handful of baby spinach
1 medium avocado
1/2 jalapeño
1 large clove garlic
1/3 cup cashews
1 tbsp nutritional yeast
Juice of 1 lemon
1/4 cup olive oil
Salt & pepper, to taste
To serve:
H**p seeds
Tortilla chips

Method:
1. Finely dice your cabbage, lettuce and cucumber and add into a large bowl.
2. Add all your dressing ingredients into a blender. Start on a low speed to break down the ingredients, then slowly increase to blend until smooth. If needed, add an extra dash of olive oil.
3. Pour into the salad bowl and mix well to coat all the ingredients. Taste and add extra salt if needed.
4. Sprinkle h**p seeds on top and serve with tortilla chips.

A Delicious Finale to the Semester 🍽️✨ Our last Crafted Kitchen of the semester was nothing short of amazing! Two teams stepped into the kitchen—Team Red and Team Blue—ready to compete for recognition, bragging rights, and ultimate flavor glory.

❤️ Team Red wowed with a bright and bold menu featuring Lemon Ricotta Bruschetta topped with macerated blueberries, Beef Ragù over capellini pasta, a Blueberry Poundcake finished with cream cheese icing, and a refreshing Blueberry Lemonade.

💙 Team Blue brought comforting, Southern‑inspired flavors with Fried Pickles and house ranch, Chicken & Andouille Gumbo over red beans & rice served with jalapeño cornbread, sweet Beignets drizzled with chocolate, and classic Peach Tea.

It was the perfect way to close out the semester. Two teams. Two menus. Endless flavors, but there could only be one winner 🏆👀 Who came out on top: or

Here’s EVERYTHING you need to make the viral Tini Mac!

1 lb. cavatappi pasta, cooked
16 ounces of mozzarella cheese, grated
16 ounces of Colby Jack cheese, grated
8 ounces of cheddar cheese, grated
1 teaspoon of garlic powder
1 teaspoon of smoked paprika
1/2 teaspoon of salt
1/2 teaspoon of pepper
3 Tablespoons of butter
3 Tablespoons of flour
1 can Carnation Evaporated Milk
2 cups heavy cream
1 Tablespoon Dijon mustard
fresh parsley

Directions:

1. Preheat oven to 350 degrees Fahrenheit. Grease a 9 x 13 inch baking dish
2. Cook cavatappi according to package instructions. Drain and set aside.
3. Combine all 3 shredded cheeses in a bowl and divide half into another bowl. Set aside
4. Combine garlic powder, smoked paprika, salt, and pepper in a small bowl. Divide in half and set aside.
5. Melt butter in a large skillet over medium heat. Once melted, add half of the seasoning mixture and flour. Stir until the mixture becomes paste-like, about 3-5 minutes. Add evaporated milk and whisk until thick. Add heavy cream and the rest of the seasoning mixture and mix until combined. Whisk in Dijon mustard until thick. Slowly add in half the cheese, allowing it to melt before adding more.
6. Stir in cavatappi until coated with cheese sauce.
7. Add a layer of cavatappi and then a layer of shredded cheese to the prepared baking dish. Repeat layers
8. Bake in preheated oven until cheese is melted and bubbly, about 25-30 min.
9. Finish by broiling until top is golden brown, about 2 mins.

As we prepare for the inbound snowstorm forecasted to impact our area, the safety of our guests and associates remains our top priority. Current projections indicate that conditions are expected to worsen throughout the day. We will continue to closely monitor the storm and make decisions with safety at the forefront.

At this time, the Marketplace and Holly Pointe will close at 7:30 p.m.

We recommend that guests plan accordingly and consider ordering meals in advance, so the community can remain indoors during the height of the storm.

Should conditions deteriorate further, we will make any necessary operational adjustments and communicate updates promptly.

Please be safe, please come early, prepare, use caution when traveling, and monitor university communications for additional guidance.
