These 2 pics were taken about 10 years apart from 2016-2026. When I woke up this morning and started to reflect on this “long strange trip” (Grateful Dead reference for those who don’t know) Erin and I have been on and I remembered this poem titled The Dash by Linda Ellis. She says “what mattered most of all was the dash between the years”. Honestly there are too many memories of that little dash to put down on this post but I will say this. Erin and I started TUK several years before we moved into with a mission to bring healthy vegetarian food to our local community and to see if there were other weirdos who ate like us 😂When we moved into the barn our mission had evolved to a plant-based eatery that provides thoughtful, nourishing food in an environment that promotes creativity & positive energy. We wrote that 10 years ago and as I read it now and after the outpouring of love we received over the last 2 weeks, I can definitely say that I think we accomplished our mission. We never had the longest line or made the most money but what we did have was the most caring, loving, kind, grateful, thoughtful, thankful, passionate and dedicated people that showed up for us day after day, week after week, month after month and year after year. Erin and I are forever grateful for everyone that is part of that little dash and honestly can’t thank you enough for all the love and support you showed us over all these years. Our hearts will be forever filled. For now, we will try and rest & recover in order for us to begin a new, slower paced dash and continue on our long strange trip.
