Chef & Owner Joseph Schuman from 0ld Cuevas Bistro in Pass Christian, Mississippi brings his authentic Cajun, NOLA Classics and Local Seafood Specials to the Low Country! Joseph Schuman has been working in the restaurant industry since he was old enough to sweep the floor! His roots go deep, all the way back to The George Street Grocery in Jackson, Mississippi, owned and operated by his Lebanese c

ommunity.in the 70s and 80s. He owned a small Cajun restaurant in Rock Hill called the Blue Bayou Cafe, and later moved to Charlotte where he was Creative Loafing's Bartender of the Year in 2004. After Hurricane Katrina he partnered with a dear friend, Chef Cassandra Timmons of the early Motor Supply Company in Columbia to revive her Old Cuevas Bistro and feed the hungry souls of The Pass on the gulf coast of Mississippi.. That is where he was when he met his dear friend and our local legend Tom Hall. After many years of sharing their love of blues and boudin, Joseph found his way back to the coast of South Carolina to work together for a few years with Tom before realizing his dream to bring a taste of the bayou to the low country as The Blue Bayou Bistro.
