With so many new faces here, we wanted to take a moment to introduce ourselves!🤩
We’re Madison and Jax, the owners of Rose & Dagger Coffee Company!
We met when we were 18 & 19, working together at a small coffee shop in New Braunfels. Back then, we spent our shifts falling in love and talking about what our own coffee shop would look like one day. We didn’t have much figured out, but we knew we always wanted to build something that felt welcoming, intentional and worth gathering around.
In September 2024, that dream became real when we opened Rose & Dagger. Every step since then has been built with a lot of faith, hard work and support from the people around us!
Jax serves our community as a local Georgetown firefighter and when he’s not at the station, you’ll usually find him helping behind the bar, fixing something that broke or bringing one of our ideas to life! Madison left her career as an Operations Manager at Ulta to take a leap of faith and run Rose & Dagger full-time. She’s the one behind our social media, marketing, menus, signs, and most days you’ll also find her behind the bar making your coffee!
Rose & Dagger has never just been about coffee to us. It’s about creating a place where people feel known, where regulars become friends & where our community has a space to slow down for a little while.
Some days we’re exhausted. Some days things don’t go as planned. But every time we unlock the doors, we’re reminded that we get to live out a dream we started talking about as teenagers! That isn’t something we’ll ever take for granted!
