Introducing Kapow Kitchen & Food Truck, a culinary adventure that takes you on a flavorful journey through Thailand, Korea, Hawaii, & Asia.

Kapow Food Truck is the next evolution in food trucks. More flavor, fresher ingredients, great service. We believe preparing the best ingredients in a natural and healthy way brings out exceptional flavor in all our dishes. Our menu includes flavors from Southeast Asia to Hawaii and we do our best to serve up innovative dishes from both our food truck and catering kitchen. Our home base will be northern Delaware, but you will find us in Newark, Dewey, Baltimore, and up north in Philadelphia. We are looking to change the dining lining landscape in Delaware by collaborating with other mobile vendors and food trucks to build a strong community. Get ready to "Chow down with Kapow!"

This weekend marks our final days operating Kapow Kitchen… and wow, what a ride it’s been. 🤙🏽

For 10 incredible years, you’ve shown us nothing but love, support, and kapow-level energy. Thank you for becoming Kapowinators, for cheering us on, and for letting our family serve yours.

We’ve truly enjoyed bringing our flavors to life. To every bowl, every stir fry, every sauce-soaked creation. You allowed us to let our culinary creativity run wild and keep your endorphins firing with every bite.

If you’ve rocked with us, laughed with us, or ate with us… please come out this weekend. It’s first come, first served until we sell out. Let’s end this chapter the way it should be ,with great food and great people.

And we can’t forget the amazing staff we’ve had throughout this era ; each one has been a tremendous part of the Kapow family and helped shape what Kapow Kitchen became.

Yo, just to let y’all know I don’t feel it’s right for them to cut off benefits that help out children as I for one used to get free lunch at school. I totally understand how this can affect families and especially children . So anybody who needs some assistance , Please come grab some food on us. We have a few choices to pick from. Just let us know that you need the kiddos meal. I will Donate the food for your kids , and you if need ! Nobody in my community is going to go hungry. That’s for sure ! if anybody needs any help., Please let me know. I’m more than willing to donate as many platters as we need to keep the kids in our communities fed ! So like I said, just say you need the kiddos meal and will give you a choice to pick from free a charge! I personally know that getting a free meal a day can really make a child/family’s life a lot easier! Things are hard enough right now with the cost of goods and everything being so high , and on top of that , to take away programs that assist children that aren’t well off to begin with is just not sitting well with me !!! Let me just tell you I ate free breakfast and free lunch in school and it’s a game changer for for me . without things like that to rely on as a child., I don’t know what my parents would’ve done without it., my family was not well off. I was the first born and I can promise you things like this helped my parents greatly! Is the least I could do because I I for one know that this is a resource that should always be available to those in need an who knows what would have happened if Imy family was not able to get and utilize things like this … so Nov 1st we will be offering free meals to those who need , at least till they open back up government aids !

Kapow Food Truck’s Last Day at Rodney Square

Today marks the end of an incredible chapter. After 12 unforgettable seasons serving our one-of-a-kind Pacific Rim tacos, Kapow Rolls, and rice bowls in the heart of downtown Wilmington, the Kapow Food Truck will roll through Rodney Square one last time.

Thank you to Tucker and the entire team for hosting the farmers market year after year, and to the for supporting our old company, Rolling Revolution, in paving the way for food trucks to thrive in the city.

It’s bittersweet to say goodbye, but we’re deeply grateful for every smile, every meal shared, and every bit of support this community has shown us. Though we’ve relocated, Wilmington will always be where Kapow’s story began.

Kapow Kitchen is turning 10!

Can you believe it’s been a whole decade of serving up Kapow goodness?! What started as a dream with a little food truck has grown into 10 amazing years of flavor, community, and unforgettable memories.

This journey has been fueled by love — from my wife, my two Tiger Boys, and every single one of YOU who has supported us through the ups and downs. And of course, none of this would have been possible without the incredible teammates and crew members who stood shoulder-to-shoulder with us in the kitchen, at the truck, and behind the counter. Their energy, hustle, and heart have been a huge part of keeping Kapow alive and thriving.

With that said — I’ll be back in the kitchen this weekend, cooking up all your Kapow favorites the way you love them. From Honey Chicken to our Thai Guy Wings, it’s time to relive the flavors that started it all.

So come celebrate with us, share some laughs, and let’s make this 10-year anniversary one to remember. Here’s to the next decade of Kapow flavor, family vibes, and teamwork.
