Trisha's World kitchen Fresh cooked gourmet food from around the world. From my kitchen to your table. For me, that has always been a difficult thing to transition to.

For almost the whole of my adult life, my friends and family have been telling me that I should open a restaurant. I put a lot of myself into my creations, and hesitate to put a price tag on my effort. But here I am, at a threshold of a time when I must share my kitchen's efforts with the people around me. So now, my signature biriani or my spicy crawfish jambalaya can be on your table. For a family of 4 or a dinner party of 50. Just email me to inquire.

A day without a calendar or a clock. I spend the rest of my life adhering to schedules and regimented planning that makes my assistant's head swim. :D But yesterday was the most amazing step away from that.

I hadn't even planned a meal, but both my boys came in, but my kitchen can always accommodate my boys. I spiced the flavors and kneaded the dough to the sound of my boys' chatter. Since the day these two could talk, their chatter has been my best entertainment. I can listen to it all day long. Over the years, if I look back, this chatter has changed so much. But it has always been my best entertainment. Two boys with a bond of their own, and a sense of humor that is not always appropriate, but always hilarious. And now, we are friends as much as we are mother and boys.

I am grateful to their dad, who must have prodded these nocturnal gamers from their beds, to arrive on my doorstep.

And my loyal Dante, who was beside himself with joy that both his brothers were home.

We watched "Where the Crawdads Sing" - this movie has touched a poignant note in my soul. There are ways in which I identify with the protagonist. I have watched it many times...and I was glad my boys liked it as well.

As the afternoon wore on...before my boys left for their dad's for dinner - with my one child curled up against me, and the other, and Dante on the other couch, Dante making sounds of absolute joy because he was so happy, the world outside, a green, peaceful one where no sound penetrated our world except our own; I marveled at my blessings.

There is not much else I can ask for myself, from life. If I inhaled my last breath tomorrow, I will not take it with any sense of regret, for myself. My only goals are about everyone else - helping everyone else succeed and find theirs.

As I told my India based business associate, on Wednesday - I can only drive one car at a time, I can only sleep on one bed at a time, and I don't eat much, so what on earth will I do with more of anything else. Except shoes. I do like shoes and clothes. :D

If you are like me, and peanut powder in shakes makes you gag...here is another way to consume this legume. (That's correct...peanut is not a nut)

Despite the bad rep of peanuts as an allergen, this legume is very rich in protein and potassium, among other nutrients. And thus highly desirable as a pre or post workout nutrient.

This peanut chutney has various versions all over India...but this is how I make it.

Toast raw peanuts in your air fryer, at around 300°F for 15 minutes. Allow to cool. In a teaspoon of olive oil, toast whole cumin, green and red chillies, one clove of garlic chopped roughly, and curry leaves(whole cumin and curry leaves are easily available in any Indian store).

Grind peanuts in wet/dry grinder, add the cumin-chilli-garlic-curry leaves mixture, and add enough water to make a smooth paste. Add lime juice and salt as desired.

This makes a great topping for simple baked or air-fried fish or meats...or even on plain basmati rice. Refrigerate and it will keep for days!

Vacation cuisine in my coastal kitchen. A quick trip to the delicate flavors of southern Italy….herbs and handmade fettuccine with plump shrimp, in a delicate light sauce; and a jaunt to the far east.. and quickly seared ahi tuna served with a sesame based sauce and … well, guacamole. Not a great match, but I forgot the wasabi.

We were on vacation… so it still went well.

The Greek summer platter.

Butterflied tenderloin of pork marinated in lemon and oregano and thyme...accompanied by fresh tzatziki made with fresh dill and cucumber. Tossed feta and sweet pepper salad.... and gnocchi sautéed with sugar snap peas and basil-oregano pesto.
