History

Established in 2012.

In the year of 2003, My Uncle Jin brought me to Japan to visit his best friend Umakuto. He lived in Tendo, a city located in Yamagata. Mr. U (Umakuto) was born in 1956, and is a experience sushi chef who owns a small sushi bar at Kamatahoncho in Tendo city. We stayed with Mr. U for three months and Mr. U taught me how to make sushi. I still remember that he used to wake me up every day at 5 in the morning to go to a fish market to buy sushi ingredients. Honestly, I didn’t like to be up so early, but I really learned a lot from him.

When I went back to the United States, I decided to apply for a job at a sushi restaurant, then I realized that sushi in United States is different than in Japan. I worked at many sushi restaurants but none of them I found have great sushi ingredients, as most of the sushi restaurant owners care only about food costs but forget about what real sushi supposed to be.
