I can have this dish everyday 😍. Actually, I have had this dish everyday!😋

Pad Woon Sen is stir-fried vermicelli noodles, egg, wood ear mushrooms, and veg lightly seasoned with Se Ew Kao (light soy sauce). Pic: Pad Woon Sen with Tofu.
You can add any protein to this light and filling dish. I love mine a fried egg Thai Style (Sunny side-up egg with Magi) and our Seafood Sauce (5-star almost native spice level) 😁

Lad Na (Thai) or Chow Foon with Gravy (Chinese) is one of my go to comforting noodle dish. The Fresh Rice Noodles are lightly seasoned with Sweet Soy Sauce and pressed against the hot wok to give it a smoky aroma. Then a nice ladle of veg and gravy covers the noodles like a warm hug.

I remember having this dish in grade school for lunch on a rainy day!
