Working on that color, bark, and finish today… and these ribs are already looking RIGHT. 👀🔥

That deep mahogany-red color is setting in, the seasoning is locking down, and that surface is getting exactly where I want it.

No shortcuts—just dialing things in, making adjustments, and getting better every cook. 💨🐷

Been doing it before it was a trend. 💨

First Brisket Italian Beef post — April 26, 2020.
First cook — May 3, 2020 at 1001 W Galena Ave, Freeport.

Full packer briskets, cooked till done, rested overnight in the cooler, sliced thin the next day, then dropped into hot au jus. Point and flat mixed together so every bite gets that flavor and juiciness.

First Brisket Gyro — December 4, 2020, announced for December 13 at Tony’s Bar.

That was two years before The Bear and before brisket Italian beef started blowing up on TikTok.

Same method. Same concept. Six years later.
