Boo and I have been blessed to be included In Camp Brisket and Barbecue Summer Camp for 5 years now in Aggieland. We just returned from another amazing camp this last weekend. We helped with cooking and answering questions from the attendees.

Camp Brisket happens every January and is all about brisket; grading, selection, trimming, wood types, cooking and so much more.

Barbecue Summer Camp usually happens in June and covers most of the above but touches on brisket, other cuts of beef, poultry and pork.

These events are put on in collaboration with Foodways Texas and Texas A&M Agriculture. Foodways Texas also puts on Camp Vino which is a deep dive into wine Dates and locations should be announced soon.

These sausages are getting all that smoke. We have four different sausages on our menu everyday. Hill Country, Jalapeño Cheddar, Bulgogi, and Brisket Boudin. You can get them fresh and hot on your tray and/or you can grab some from our freezer for a discounted price and take them home with you.
