The answer. Country Blend for red beans and rice, Jalapeño if the pot should carry heat. But the bigger correction is the timing: the sausage goes in near the END, not at the start. It’s already smoked and fully cooked, a two-hour simmer doesn’t improve it, it empties it. ↓
