People often ask me how Thee Pony Espresso came to be.
The truth is... it wasn't born in perfect circumstances. It was born during one of the most uncertain seasons any of us have lived through.
When the world seemed to press pause, I refused to.
Like so many Americans, I found myself searching for purpose when everything felt uncertain. After losing my position as a Veterinary Hospital Manager during the pandemic, I had a choice: sit still or keep moving.
If you know anything about me, you know sitting still has never been my style.
I found myself behind the espresso machine at a local country store that had just opened a cafƩ. What started as "just a job" quickly became something much bigger.
Coffee has always been more than coffee to me.
It's that first sip in the morning that reminds you there's work to be done, dreams to chase, and another chance to make today count.
I became obsessed with learning everything I could. I enrolled in Barista Hustle, where I learned more about coffee than I ever imaginedāfrom the rich soils of Brazil to the science and artistry behind every perfectly crafted cup.
Then something incredible happened.
The owners gave me creative freedom.
Armed with syrups, fresh fruit, ingredients from the store shelves, and a few adventurous coworkers willing to taste-test just about anything, we started creating drinks that made people smile.
Customers didn't just come in for coffee anymore.
They came to see what we'd dream up next.
That's when I realized something...
I wasn't just making drinks.
I was creating moments.
I'd dreamed of owning a coffee shop ever since growing up in Alaska, where coffee isn't just a beverageāit's part of the culture. I didn't have investors waiting in the wings or a pile of money sitting in the bank. What I had was grit, determination, a whole lot of creativity, and the belief that if I kept putting one foot in front of the other, I'd figure it out.
So I did.
Piece by piece.
Cup by cup.
Event by event.
Today you'll find Thee Pony Espresso at festivals, community events, rodeos, and car shows, serving handcrafted drinks that are bold, refreshing, colorful, and just plain fun.
People often ask me why every cup says:
HELP IS ON THE WAY.
Because I believe it is.
Maybe it's just caffeine.
Maybe it's a cold drink on a hot summer day.
Maybe it's five minutes of conversation with a stranger who leaves as a friend.
Maybe it's that first sip that reminds you today is still full of possibility.
Whatever you're carrying, I hope that when you walk away from my drink set up, you leave feeling just a little lighter than when you arrived.
That's what Help Is On The Way means to me.
This past year, I intentionally stepped back to finish my college degree and make sure the next chapter is built on a strong foundation.
Now I'm ready.
Ready to build.
Ready to grow.
Ready to serve.
I'm a cowgirl at heart.
I've been bucked off more than once, but I know how to get back in the saddle.
Thee Pony Espresso has never been about taking the easy trail. It's about resilience, community, and showing upāeven when the road gets rough.
Now I'm looking for someone who wants to help write the next chapter.
