A lesson in balance. 
 
Honestly, one of the biggest misconceptions in coffee is that strength and extraction are the same thing. 
 
They’re not. 
 
Strength is how concentrated your coffee is. 
Extraction is how much flavor we’ve dissolved from the ground coffee. 
 
You can have a strong espresso that’s under-extracted. 
You can have a weak espresso that’s over-extracted. 
 
The goal isn’t stronger coffee. 
It’s balanced coffee. 
 
It’s something our baristas chase every morning—adjusting, tasting, and dialing in until sweetness, acidity, and body all complement each other. 
 
Reading about it is one thing, tasting it is another. 
Come in this morning and we’d love to make you a cup.
