Prior to Sushi Koto, Frank and his wife Hideko were managers of Koto Restaurant, the landmark restaurant in Newport Beach that was closed in 2004. Instead of returning to Japan, they decided to continue to provide the top quality sushi and traditional Japanese dishes that the people of Orange County have come to love, and opened Mimi Sushi in 2005. The traditional dishes they serve provides a sens

e of “home” for many Japanese families that have been relocated to Orange County, and also creates an opportunity to introduce something new to an American audience that is unfamiliar with Japanese cuisine. Since then, they have changed their name to Sushi Koto and continue to serve various dishes that were popular from Koto Restaurant.
