Chapter 10

Every Story Eventually Reaches a New Chapter

If you’ve been reading these chapters from the very beginning… thank you.

Thank you for taking this journey with us.

Perhaps some of you have been wondering…

Why have we been sharing all of these stories?

The answer is actually very simple.

Seven years ago, we thought the most important thing was to build a successful restaurant.

Seven years later, we’ve realized something different.

The restaurant was never the most important part.

The people were.

The conversations.

The friendships.

The memories.

Those are the things we hope will last long after we’re gone.

Because every story… eventually reaches a new chapter.

And Blossom Kitchen is no different.

After much thought, we’ve made the decision that when our current lease comes to an end, we will not be renewing it.

That doesn’t mean we hope the story ends here.

In fact, we hope it doesn’t.

Our greatest hope is that someone else will one day continue writing the next chapter of Blossom Kitchen.

If you’ve ever dreamed of owning a restaurant… or have an idea about carrying this story forward… we would truly love to have that conversation.

Chapter 9

The Things We Chose Not to Compromise

Over the years, people have often asked us:
“Why do some dishes sell out as early as 6:00 or 7:00 in the evening?”

Our answer has always been simple.

When today’s ingredients are gone…

they’re gone.

To us, that means today has come to an end.

Not that it’s time to serve yesterday’s leftovers.

Over the years, we’ve received plenty of well-intentioned advice.

“Why not use ready-made sauces?”

“Why not prepare everything ahead of time and simply reheat it?” “Why not order more, so you don’t sell out?”

They were all good suggestions.

They just weren’t the choices we wanted to make.

We believe freshness shouldn’t just be something written on a menu.

It should be a decision we make every single day.

Every day we prepare our own sauces.

No MSG.

No preservatives.

Fresh vegetables.

Fresh meats.

Fresh broth.

Everything is prepared for the day and used that same day. Sometimes that means we sell out earlier than we’d like.

But we’d rather disappoint someone because we ran out…than because the food wasn’t as fresh as it should have been.

These aren’t our restaurant’s “special features.”
They’re simply our values.

We’ve never wanted to become the biggest restaurant. We’ve only wanted to become one we could be proud of.

So every night, when we lock the front door, we hope we can honestly say: “Today, we stayed true to what we believe.”

Because the most important promise we’ve ever kept… is the one we made to ourselves. To always do the work the right way.

Chapter 8

The Customer Who Came Just to Check on Us

One day, without realizing it, our restaurant phone had stopped working. We had no idea.

That evening, around 7:00 PM, a customer walked through our door. I smiled, thinking they were here to place an order. Instead, they said,

“I’m so glad you’re open.”

“I’ve been trying to call you all day, but nobody answered.” Then they smiled and added, “I’ve already had dinner.” “I just wanted to stop by and make sure you were okay.”

Even now, years later, I can still picture that conversation.

It reminded me that somewhere along the way, some customers had begun caring about us just as much as we cared about them.

Looking back, I often think about how fortunate we were that our very first restaurant happened to be in Fountain Hills.

We didn’t just find customers here.

We found neighbors.

We found friendships.

We found a community.

And that has always meant far more than we could ever put into words.
