Often times when we tell people we're a From Scratch Restaurant, they don't quite get what that means.
They'll categorize us as Farm to Table or Upscale.
We try our best to take the Farm to Table route whenever we can. But if you know anything about how food works in this country, you understand how tough it is for a restaurant to buy 100% local while still keeping an agreeable price per plate for everyday dining.
And I don't consider Brewer's Bistro "upscale" at all. At least not comparatively.
So here's a super simple comparison.
On our baker's rack, you'll see three different kinds of potatoes. We washed them, cut them, blanched them, roasted them, seasoned them, and turned them into something we're proud to put on your plate.
In the other pictures, you'll see IQF potatoes.
That's really what From Scratch means to us.
We're starting with raw ingredients and doing the work ourselves instead of buying something that's already been made in a factory and reheating it for you.
It's not fancy. It's not "upscale."
It's just cooking. What I believe is the correct way.
