About the Farmer:
Huver, a third-generation coffee producer only recently started growing himself. Prior to 2015, Huver was a math teacher in Nariño. El Paseo is located near Buesaco, on the Suma Paz trail and where Huver got the opportunity to work alongside his father. For over 20 years, El Paseo has been in Huver's family. With an altitude range of 1750 to 1950 meters, the farm features native shade trees and overlooks the Valley of Buesaco.

About the Coffee:
This variety of Caturra undergoes a carefully detailed multi stepped anaerobic semi-washed process. The process begins with 60 hours of natural (as all coffee is somewhat fermented) aerobic fermentation in a concrete tank. It is here where the coffee cherries are floated and sorted, removing any that do not meet quality standards. Afterwards, the coffee is depulped and transferred to special anaerobic steel tanks where the pH is monitored daily to ensure optimal fermentation conditions. Once the coffee nears a pH of 4.5 Huver adds a lactic acid bacteria mix, made from coked sugarcane and passionfruit, a mixture Huver has worked over 4-years to perfect. After fermentation, the coffee is set out to dry in the sun for an average of 20 days. It is then stored for an additional 20 days before milling to ensure quality and consistency.

NEW COFFEE ALERT!!

About the Coffee:

Ripe cherries are fermented for 24 hours in closed bags (anaerobic fermentation) before being depulped without water. The seeds are then sealed in bags and left to ferment for an additional 36 hours, at which point they are rinsed and moved to raised covered beds and dried for 13 days. The parchment is stored in sealed plastic bags and in shade until milling.

About the Farmer:

Rudy's father grew coffee when Rudy was a child, and that's how he got started in the world of coffee growing. At 10 years old, Rudy started making seed beds with his brothers to produce small coffee plants that they wrapped in plantain leaves to preserve the soil on the roots so they could take them to neighbors who had land and wanted to start growing. He and his brothers did

not have their own land, so they could only sell the small plants and seeds. When Rudy turned 15, his father inherited them a small piece of land, and that's how he started as a coffee producer. Today he is 60 years old and has been working on his own land for more than 38 years. He has been part of the resistance as an active member for nine years now, they fight against the mining company located in San Rafael. in addition to that as a group they take care of the environment and ensure the protection of their natural resources.

In Rudy's words:

“What I am looking for by selling my coffee to Canada is that we as a group carry out the entire process in an ecological way, so as not to pollute the rivers or the environment, but also to obtain a fair price for all the work that the coffee entails.”

By sourcing this coffee, we hope to impact the efforts of Rudy Garcia and his fellow Cafe Colis Resistencia members who are fighting against the silver mining company. They hope that by taking action, as they have been for years, they can prevent further harm to the health and safety of their environment and communities.
