e and nut-free products. However, I do use wheat and nuts frequently, so if you have a severe allergy, these treats may not be right for you. *

As a vegan establishment, I personally ensure your products are completely free of dairy/lactose/casein/milk derivatives, eggs, gelatin, confectioner's glaze/shellac, bone-char whitened sugar, and all animal byproducts. I have been vegan myself for over 7 years and know the ins and outs of extensive label-checking! All my ingredients are of the finest quality, and organic, fair trade, and/or locally sourced whenever possible. Roll With It runs on wind power! When you order from us, you are supporting local business, veganism/animal rights, and eco-friendliness! I am in compliance with all Texas Cottage Food business laws. I only prepare non-potentially hazardous baked goods, and have passed the State Food Handler's Safety course requirements. I have an extensive background in food operations - much of my family has owned restaurants and cafés since the 1970's, I have worked in several restaurants, and I have done home baking for decades. Keeping my kitchen sanitized is of utmost importance for me to ensure superior, delicious food.

I have not experimented with gluten free phyllo dough YET, but I’d like to have GF options for virtually everything. Any food restrictions, I will do my absolute best to accommodate ~ and when you order from me, you always get the very best!

I love making French toast this way ~ especially for a holiday crowd that demands feeding far too early 🥱 I appreciate the patience before we officially open, I’m getting the new website set up from scratch - slowly! And I’ve got to overhaul my labeling system for shipping, but I hear Santa may be gifting a fancy postage scale and a thermal label printer 👀 I will likely be open locally before I can ship - follow to keep up with the news!

Still figuring out which days / hours we will be open for order pickup locally - open to input from the surrounding communities. The weekend is ideal but also up against all the local farmers markets, so maybe Wednesday & Saturday (for example) to begin with, depending on interest- but as soon as you try it, I’ll have to hire help to keep up! It’s great to be back in the kitchen 💜

I’ve had this mini gingerbread house cookie cutter since before I left Texas 😂 If I have time to do a (vegan) pop up market locally in Georgia before the holidays are in full swing, I will make a bunch of these preassembled (and maybe a few with the loose pieces & an instruction paper? 😂)& a few glutenfree.

In all seriousness though I am working hard behind the scenes to get legal, and a lot of that has to do with overhauling my labeling system - which needed to be done anyway 🤷‍♀️

But making detailed ingredient labels with the approximate weight, when you’ve never done so, is …challenging. Many will have to be handwritten / printed at home at first because I have a LOT of items, with a LOT of variation within those items, so it will be impossible to pre print labels for everything! But the good news is, once the hard work is done, it’s done (unless I calculate nutrition facts….but you guessed it; to produce large scale or print cookbooks, that would be beneficial anyway - you’d probably want to know the approximate net carbs in my low carb recipes, right?) also…labels. Does anyone have a recommendation for a home label printer / software thing? Ive gone through Vistaprint before for business cards and labels, but it gets expensive! Conversely, so does printer ink , so I’m not sure which avenue to go down.

So, lots of work ahead. Unless there is some sort of magic software or app that could help me, but I probably would stubbornly refuse to use it even if there is 😂 Back to the spreadsheets…

Rustic pie that my son helped make ~ we thought it would be fun to make one start to finish, beginning with roasting the pumpkin cut into halves. It was light and mousse-like, and so flavorful with spice!

Tomorrow’s agenda is sugar cookies and gingerbread, and the beginning of a quest to make crispy wafers with chocolate hazelnut filling.

Roll With It Vegan Bakery initially shut our doors in late 2019, thinking it was temporary. Well, some things happened, and then various stuff continued to happen (I wouldn’t recommend it). My little bakery traveled from West Virginia to Austin and Round Rock 2010-2019 and has been through so many ups and downs. It’s time to officially let Roll With It rest. Yet, I can no longer deprive the world of my sweets.

Welcome to Pie ~Pastry Indulging Everyone~ the best doughnuts and decadent desserts to come to the tristate area between Chattanooga TN, Atlanta GA, & Birmingham AL. Pie (Pastry Indulging Everyone) is a cottage bakery making custom treats to order, with emphasis on special diets like gluten free, vegan, and keto. I’m wrapping everything up before I slow open and take holiday orders & maybe a popup sale. Please bear with me as I continue to adjust prices or certain dietary swaps because things have kinda changed since I last operated Roll With It in 2019. All ingredients are of highest quality - everything handmade (sometimes down to the sprinkles), local and organic when possible.

I have 30 years experience baking, and 15 years focusing on special dietary needs, so I am constantly learning and improving. For custom orders, I work with you individually - I get to know you and your needs - and will likely remember for future orders! I make everything from scratch with care, extensively checking labels of hand selected ingredients and take every precaution to prevent cross-contamination (though I cannot guarantee it).

Even if you have multiple sensitivities, I will do my best to make your treats happen! I have made cakes and and a few basic items that were glutenfree, egg free, dairy free, nut free, and soy free (at the same time) - and had them as repeat customer every birthday.

I’m still setting up my basic website so I can take cards & have a QR code to pay online & a self serve bakery stand nearby. And the new GA cottage food bill allows SHIPPING! (Some of you Texans have been waiting for this for years 😂) To all my friends old and new, thanks for joining me on this culinary journey

Reopening under new business model & name ~ PIE! Short for Pastry Indulging Everyone, a pie in the sky bakery making custom gourmet goodies, even with dietary restrictions - such as vegan, glutenfree, multiple allergen friendly, or keto / diabetic friendly. Because everyone deserves PIE.
Bringing over 30 years culinary experience to the Cloudland/Menlo GA area (15 with special diets), PIE formerly know as Roll With It vegan bakery in Austin TX makes goodies like yeast raised doughnuts, vegan sausage rolls, cakes, cookies, and of course, pie.

Currently taking special orders for pickup; please contact me by text or DM well in advance of needing your order. I will also be able to SHIP some orders under the new Georgia Cottage Food bill! Looking into setting up a self-serve bakery stand at a local gas station/restaurant…more info to come.

I know so don’t post a lot these days, but I’m still here behind the scenes baking and keeping an eye open for commercial property. Looking at two places in particular nearby 😍

Also, heads up on a name change. I feel Roll With It has run its course, and I think it’s time to put it to rest and start anew. Goodbye, old friend. It’s been great 💜 Don’t worry - still baking vegan and working with multiple allergens, also focusing on low-carb and sugar free for people with health issues ~ because everyone should be able to have treats 💜
