I’m thinking about making pizza for Monday. Anyone wanna try some fresh milled ancient grain sour dough pizza? $25 for a 16” square pizza box with a free pizza in it!
That’s for a thin crust tavern style pizza that feeds 2 to 3 people!
I also make fresh milled ancient grain sour dough bread, if anyone is interested in a loaf!

*scratch made pizza/bread freezes and reheats well. Any leftovers throw in a plastic bag, freeze, then reheat in a small oven. Waste not want not! Same with real bread. It needs to be sliced, stored in the freezer, take out what you need, reheat in toaster. Last for a year like that!

Kitchen, work area, fresh milled flour hutch! I was lucky to find a really good deal on a brand new bakers pride stove/oven and a new estella 30 qt spiral mixer. I also have a high temp oven, not pictured but I have arrived at the conclusion that I prefer lower temp, slower baked pizza for crunch and texture! A regular oven works great for my pan pizza!

My go to break-fast around lunch! Salad (curly mustard, kale,arugula), tomoatoes, out the garden and gotta have a fresh homemade Caesar (no cheese). I put that s**t on everything. Tomato kale sandwhich, avocado toast, Shazam it’s good. We used to make that very same dressing (with cheese) at the Hilltop club Jax Fla. 1986! One yoke per person, splash of EVO, tbs of pecorino, 1/2 tsp of garlic, 1 or two fish or worstershire if they don’t like anchovies. Back when flaming deserts, drinks were all the rage! Lord only knows how many restaurants burnt to the ground in that era. Happy jump day peeps.

Some of my past baking projects. Always exploring and tweaking recipes. Most start with poolish followed by 48-72 hr CT proof which adds great flavor. I don’t add sugar to any bread or pizza dough and it taste great.
