NEXT WEEK FOODSERVICE MENU LOADING TONIGHT 😉

Yo, I think I sold more Smoked Turkey Cabbage sides than anything else on the menu 😩, I’ve NEVER made cabbage for y’all because (to me) it’s super basic, but I think it took the first order to go out, and that person went and spread the good news, and boom, cranking side orders out like a fast food burger joint.

So with the cabbage, (I USED THE STARTER PACK) I started by sautéing complete epis and puréed garlic, added the smoked turkey wings, then water. I let the meat stew then added , bay leaves, puréed habanero (you can get that in store) and other spices (always watch my stories in foodservice days, all the cheat codes are there.)
Anyway, what made it different was, I built the broth first, and as foodservice continued, I gradually added the cabbage so it wouldn’t just deteriorate. It still had a lil’ bawwwdy
The Cornish hen 😮💨 it had a Bougie Lemon Pepper Butter Sauce bath (you can get that sauce in store or online too!)
