Good evening, Big Family,

We have seen a lot of recent news about iceberg lettuce imported from Mexico and the food safety concerns that have affected many people. We wanted to take a moment to share what we use at General Phở Vietnamese Kitchen.

We use Romaine lettuce, not iceberg lettuce. Our produce is purchased from trusted suppliers such as Sam's Club and Restaurant Depot, and we thoroughly wash our vegetables before serving them.

You will find Romaine lettuce in our Fresh Rolls and Vermicelli Rice Noodle Bowls, including those served with Spring Rolls, Grilled Meats, and Grilled Garlic Butter Shrimps.

We know that when you choose to eat with us, you are trusting us to serve food to you and your family. We eat the same food that we serve to our customers, and we do not take that responsibility lightly. We are committed to doing our best to provide fresh, quality ingredients and a safe dining experience for everyone.

Life keeps us all busy, but hopefully you can find a little time today to relax and enjoy the FIFA World Cup Final as the world's attention turns to North America for one last match.

As immigrants, we understand the excitement and pride that sports can bring to communities around the world. No matter where we come from, events like the World Cup remind us that we can gather together, celebrate our differences, and enjoy the spirit of friendly competition.

While we continue working hard to bring General Phở Vietnamese Kitchen closer to opening day, we hope you are able to spend some quality time with family and friends, enjoy the game, and create lasting memories.

Good morning, Big Family,

We have been a little busy over the last couple of days, but we wanted to share another progress update with everyone.

According to our plumber, we cannot use his real name, so we will just call him Mario. We are happy to report that Mario has completed the plumbing work, and it has passed inspection. He has also finished running the gas lines and connecting the equipment. Now, we are waiting for the next round of inspections before we can move forward.

A special thank you to Princess Peach (his wife), who saw our post and made sure Mario leveled up so he could run through all the tunnels and finish the job as quickly as possible! 😊

We are getting closer to the finish line one step at a time. Thank you for your continued support, encouragement, and patience as we work toward opening our doors.

Good evening, Big Family,

Another week has gone by, and the remodeling of General Phở Vietnamese Kitchen at 944 N Dixie Blvd, Radcliff, KY is getting very close to the finish line.

The kitchen is now full of equipment, but it is not operational just yet. We still need to test the equipment, have some units serviced, and add a few more pieces to complete the layout. Our plumber is currently running the gas lines and finishing the water and drainage connections. Once that work is completed, we will be able to begin scheduling the required inspections.

The two dining rooms are still waiting to be furnished. We have enough chairs for now, but we are still searching for the remaining tables to complete the space.

We are also planning to put together a short video tour of General Phở Vietnamese Kitchen so you can see the progress and get a walkthrough of the restaurant before we open our doors.

Good afternoon, Big Family,

General Phở Vietnamese Kitchen is getting closer to the finish line with our renovations, but we still have a few major items that need to be completed next week. The gas lines and plumbing work still need to be finished, and then we will begin scheduling inspections, including electrical, plumbing, HVAC, building, Fire Department, and County Health Department inspections. There may be a few more steps along the way, but whatever needs to be done, we will put on our Forrest Gump hat and keep running until we cross the finish line.

As we have said before, we did not accomplish this project alone. This journey has been made possible by the support, encouragement, and helping hands of so many people in our community. We would like to give a special shoutout to the Diamond Slayers softball team for spending part of this 250th Independence Day weekend helping us move one step closer to pursuing our dream and our own piece of the American dream. Your hard work and generosity mean more to us than words can express.

Good morning, Big Family,

All of the mist fans are running, and that is how we have been surviving the summer heat while spending nine hours a day inside the food truck when we are open.

We do have air conditioning, but once the doors and windows are open and the burners, fryer, broiler, and hood system are running, the cool air from the AC quickly disappears. The mist fans help cool the air around the front windows and back doors, and the hood system pulls some of that cooler air into the trailer to help provide a little relief from the heat.

The idea for using mist fans comes from my deployments to Kuwait and then Iraq. When we were sleeping in large tents, there was often a commercial fan with a water misting system at one end, helping circulate cooler air throughout the tent. During those times, you learned to adapt, overcome, and make the best of the conditions.

That same mindset has helped us through the challenges of operating a food truck, and it is a mindset we are bringing with us as we work toward opening our brick-and-mortar location. No matter the obstacles, we keep moving forward one step at a time.

Good evening, Big Family,

It's going to be a hot one this week. This will be our fifth summer serving Fort Knox from the General Phở Vietnamese Kitchen food truck. Looking back, it is hard to believe how far we have come. We have worked through hot summers, freezing winters, rain, snow, and everything in between. Through it all, your support has kept us going.

While continuing to serve from the food truck, we are also working hard to bring our brick-and-mortar restaurant to life. Today was another exciting step forward. Our cooking equipment was delivered and set in place. We are now waiting for the gas lines to be installed so the equipment can be connected. The fire suppression system for the hood still needs to be completed, and the sinks are being installed while we wait for the remaining plumbing connections.

There is still plenty of work ahead of us, but each day brings us one step closer to opening our doors. We are excited about the opportunity to provide a comfortable place where you can escape the heat, sit down with family and friends, rehydrate, and enjoy a bowl of phở or one of the many dishes we love sharing with our community.

Good morning, Big Family,

It is raining heavily this early morning, but life continues at General Phở Vietnamese Kitchen's food truck. The fryer still needs to be cleaned every Saturday, rain or shine. However, changing out the propane tanks may have to wait until the rain eases up a bit later today.

We still have a lot of work to do at General Phở Vietnamese Kitchen, located at 944 N Dixie Blvd, Radcliff, KY, as we continue pushing toward the finish line. That is where we will be spending the rest of this rainy day.

Thank you for your support throughout the years, whether it has been rain, snow, cold weather, or sunshine. Your encouragement and loyalty mean the world to us. We appreciate each and every one of you, and we look forward to serving you for many years to come.
