The first three stages of the pickle pizza!

First a ton of high quality pickles - not those sad, floppy ones. We’re talking crisp, flavorful ones! We add them along with a bunch of other hand processed toppings, then bake it to perfection!

Finally, we add more pickles, crispy fried onions, and a drizzle of house made dill ranch!

It’s a pretty big dill - June is Pickle Pizza month! Last year’s best selling monthly special pizza returns this weekend at Pop-Up Pizza.

Starting with our hand stretched dough and a house made garlic and dill cream sauce, mozz, sharp cheddar, bacon, and pickles, it gets baked then topped with crispy fried onions, even more pickles, and a homemade dill Ranch!

We had the absolute pleasure of getting an early peek at in nearby Strawn, IL! Lily and her family did an absolutely amazing job with the renovation of this beautiful old church, and the baked goods and coffee are truly top tier! It’ll be so nice to have this wonderful business nearby. They open June 1st - go visit!!!

Today and tomorrow we’re open, serving pizza for the last time in May, and our May Special, the Elote, is done after tomorrow! So, don’t wait, come see us!

We restocked on fresh chorizo & chicharron today from El Petacas! Yep, it’s the last weekend to get our Elote Pizza, our May Special! We made plenty of dough, and are ready to serve you Thursday, Friday, and Saturday!

No cheesecakes this week, but if you haven’t tried our Glamper Dessert Pizza yet, now’s the perfect time. Nutella, Bananas, Powdered sugar - gooey goodness and it’s perfect for sharing.

Plus, Thursday is trivia night at Emancipation, so come hungry, and come play some trivia! Or, sit on the Patio and enjoy your pizza there!
