One of my clients' favorite flavor is Almond Vanilla Cake with Dulce de Leche filling.
This time, though, a new client requested a decorated Tres Leches cake. I explained that I don't normally offer decorated Tres Leches cakes because they can become unstable, especially with a tall, 3-layer design that needs to be transported safely.
She still wanted it, so we agreed on a lightly soaked Tres Leches cake that would hold its structure. I also included an extra bottle of the milk mixture so each slice could be soaked even more before serving.
In the end, she was disappointed because she expected the cake to be much wetter and less sweet.
This experience taught me an important lesson: not every order is the right order. As cake artists, it's okay to say no when we know we can't deliver the exact experience a client is expecting. Protecting your standards is just as important as making the sale.
