In this newest episode of In The Kitchen, Executive Chef Shelby Griffin takes you behind the scenes of Victors in-house dry-aging process—a craft that transforms every steak into an unforgettable dining experience.

Our carefully controlled dry-aging process removes moisture while naturally breaking down the fibers of the beef, creating a richer flavor and an incredibly tender, melt-in-your-mouth steak. Each steak is hand-cut in-house, flame-grilled to perfection, and served with a complimentary trio of house-made sauces:
