Borrowed some ideas from new friends in South Dakota. These pheasant snack sticks turned out really well. Mixed with pork belly and chicken thighs to make the ratios work out evenly. I cured them overnight and then put them in a low temp, low humidity, and light smoke environment for a few hours.

We finished off the Delta BBQ Brawl this weekend with Cleveland Octoberfest Mississippi. We were so fortunate to come away with a 2nd place showing in pulled pork and a 1st in loin!
Congrats to Boneyard Smokers on that GC! Big shoutout to Butt Hurt BBQ for securing the 2025 belt and Swine Life BBQ for getting it done on the pro side!
We are ready for a little breather, but will certainly miss all of our bbq friends and family. See yall in the Spring!

We sure had some challenges this weekend, but we pulled through! Thanks to all who help put on these events and all of the teams. We’ve met some of the best people in the world and have made many lifelong friends.
