Before a new menu ever reaches the bar, it lives here first.

On a whiteboard.
On scraps of paper.
In late-night ideas and early morning tastings.

Menu creation is slow and deliberate. Sometimes it takes weeks. Sometimes months. It’s a slow process of tasting, adjusting, and asking a lot of questions.

What fruits are in season right now?
What flavors actually complement the coffee instead of overpowering it?
What will feel refreshing when the weather shifts?
What will surprise people in the best way?

Sometimes a drink begins with a single ingredient a fruit, a spice, a memory, or something we tasted somewhere else. From there we test, refine, and test again.

Some ideas fail. Some evolve. A few become something special.

We care deeply about what ends up in your cup. Every drink is intentional from the ingredient pairing to the way it’s built.

So when a new menu drops, just know it didn’t appear overnight.
It started with a wall like this.

And a lot of curiosity.
