bánh canh is one of our favorites. traditionally served in a seafood soup, thick and chewy — but we took it somewhere completely different.

the secret to the perfect bite? balance.

there’s a reason our crispiest dishes always come with fresh herbs and lettuce on the side.

take our Crispy Whole Fish or our Seafood Chả Giò. you wrap them in cool lettuce with fresh herbs and dip into a fish sauce nước chấm. the herbs lift the richness. the tartness cuts right through. one dish becomes a dozen different bites, each one a little different from the last.

crispy paired with fresh. rich paired with light. this is the beauty of Vietnamese dining, and it’s exactly what summer calls for. 🤍

not all salted plums are the same. ours is sourced by our founder’s mom. she’s very particular with her salted plum candy, and honestly, we agree. it’s the main ingredient, and finding the right one makes all the difference.

a salted plum, called ô mai or xí muội in Vietnam, is an unripe plum cured in salt, sugar, and spices like licorice or chili. if you grew up in a Vietnamese household, you already know exactly what this tastes like.

we use ours in the Xi Muoi Spritz and our Salted Plum Soda.

we heard that it’s hard to just have one! try it for yourself next time.
