We pretty much always have a salmon dish in the menu…tbh, I really don’t like salmon. HOWEVER, I really love cold poached salmon with a light slathering of aioli. So I put it on the menu: cold poached salmon, sauce vierge, potato & olive salad, lemon aioli. YUM!
