I am going to preface this by saying, I know the economy is rough. I know wallets are thin. I know bills just keep on climbing. I live here as well :)
I did some math yesterday and realized its just 50 pizzas.
The significance of that number is huge to me, probably doesn't mean much to you.
If we were able to sell 50 more pizzas a day, 99% of the stressors in the business would be gone.
50 pizzas in a town of 70,000 + seems doable, but it hasn't been.
50 pizzas when we use organic flour, make everything from scratch, shred our cheese fresh, cut all of our veg daily and do so much to bring you the best pizza we can.
50 pizzas when we have been showcased on Food Network. When we were placed on a short list of 6 pizzerias by Guy Fieri. When we have won "Best Pizza in Fairbanks" in the News Miner every year we have been open except 2. When we have been voted Second and Third Best in State in Alaska Business Magazine 4 times. Only being beaten by places with followings almost as large as our town lol.
We are busy during dinner for sure, but we have hours a day where we make less than 10 pizzas per hour.
On any given day we make less than 10% of what McDonalds makes selling 'fast food'.
It is very weird to me how people support chains so much more than local places. Yes, I realize the chains are sometimes locally owned and always employ locals. In a recent study (by the Institute for Local Self Reliance) local restaurants kept 79% of their revenue in the local economy while chains were at 30%. They tend to use less expensive ingredients than most of the local places. They employ less people because they have systems in place that minimize their labor, they spend millions researching that. They have multi million dollar advertising budgets and food research teams. We have "us".
At the moment, "us" consists of 27 local people that are doing our best to get you interested in coming by to try our pizza. It is a lot harder than it sounds. It takes constant commitment. A ton of labor and dedication to what we do.
I guess what I am saying is, support local places. I know some complain that local places taste bad or have bad customer service. I have yet to eat at a local place where I wished I had ordered fast food instead.
Thanks for reading this, I know it was long :)
