SLOOOW RISE! At Brooklyn Bros, we take our pie seriously, and it all starts with the dough.

Everett is blessed with a great water source that is remarkably comparable to New York’s and is the primary reason we make all of our dough for both locations in one downtown kitchen. That, along with specialty flour and a lotta love make all the difference.

To this day, we use the same method that brought us our original success, a cold rise that perfectly develops the flavorful, light and airy thin crust you know and love. And no rolling pins or dough dockers for the pies around here!

Every pizza is hand stretched and tossed by our cooks to make a perfectly unique Brooklyn Bros. Pie that can only be achieved by human hands and a lot of practice and skill.

FIRST FRIDAY is coming up and we got a real special one for ya celebrating all things Calabria.

OK if you know us, you know we love the Calabrese. Every year in August in Spilinga, Calabria they spend a few days celebrating one of the regions’ best inventions: ‘Nduja.

If you don’t know ‘Nduja, now’s your chance. Nduja is a smoky-spicy salami similar in consistency to a pate. What started as a survival food in the 1800s has evolved into a specialty of the region and become known around the world for its distinct flavor.

This Friday along with our wine spritzers come find THREE specialty pies available by the slice or the whole pie:

Nduja White Pie: Nduja, chopped Calabrian chilis, and fresh basil atop a white pie base. Smoky, spicy, creamy, delicious.

Tomato Pie: East coast classic with Sicilian EVOO, Italian tomatoes, fresh grated Romano, wild Calabrian oregano. A bright and tomato-forward classic.

Classic Nduja (not pictured): Nduja dolloped on a classic cheese pie.

Everett shop only. We might even have a few jars of this very special stuff for sale.
