Our sourdough bread supplier can’t ship for the next month.
For most restaurants, that’s a swap-the-bread problem. For Inspired Indian, it’s bigger. Our entire sandwich menu relies on one specific brand. I tested a lot of bread before we opened. Only one made the cut.
Here’s the bigger picture. Seven months after we opened, Eater Chicago named us to their Evanston’s Best Restaurants list. The bread was just a small part of that. The real work is in the spice blends, the sauces, the flavors we layer into each sandwich.
So I’m not waiting this out. I’ve been developing some new menu directions, and this is the push I needed.
