Hello! 🌾My name is Heather, and I wanted to tell you about my dream business, which started in March.
I am The Joyful Vegan, and with help from my husband and now two assistants, I cook delicious plant-based, gluten-free entrees in a commercial kitchen in downtown Eugene on Mondays.
We have been steadily growing, expanding capacity gradually to ensure quality and timeliness of deliveries.
✨Most of our customers are omnivores😁
Many of our customers now order several weeks ahead to take advantage of a 10% discount and to make orders before we sell out.

Blueberry Yumm!🫐🫐🫐Recently, I was thrilled to find a new blueberry coffee cake recipe that had recently been uploaded from and I knew I had to make it! From lots of experience, and personal preference, I changed out the streusel topping for crumble, and I am absolutely thrilled with the results! I really enjoy using a spring form pan, it allows for a little taller cakes, and a cleaner finish🤩As always, this and every other recipe you see in my Insta gallery is 100% VEGAN, babayyy!🥳😍Let’s make this a great week, sweet peeps !
