Sushi Seoul Sushi Seoul Sushi Seoul in Eugene was established in June, 2009. Owner and Head Chef Steve Choi grew up in South Korea right by the ocean.

Family owned and operated by Steve and Diana Choi, Sushi Seoul offers fresh, hand-crafted sushi, Japanese food and Korean dishes. As the son of a fisherman, Steve developed a deep knowledge for preparing a variety of fish from a young age. Prior to opening Sushi Seoul, Steve received his sushi training in South Korea as well as at Misako Sushi Restaurant in Eugene for several years.
