First and foremost, I want to sincerely thank everyone who has supported Keio’s Kitchen from day one—every customer who walked through the doors, shared a kind word, told a friend, posted about the restaurant, prayed for me, or simply gave me a chance. Your early support and patronage have meant more than you know, and I am deeply grateful for the love this community has shown.
The restaurant business is one of the toughest businesses you can step into, and this journey has absolutely proven that. It takes grit, resilience, humility, and the willingness to adapt in real time. Over these past months, I’ve had the opportunity to learn the rhythm of Ennis—its people, its pace, its preferences, and what it truly takes to build something sustainable here. One of the most honest lessons in entrepreneurship is realizing that sometimes your vision is bigger than your immediate readiness to execute it at the level it deserves. And while the dream may be clear, the path to getting there sometimes requires recalibration, refinement, and strategic adjustment.
Entrepreneurship is rarely a straight line, and sometimes the first plan simply isn’t the best plan. That’s not failure—that’s part of the learning process. Real leadership is having the wisdom to recognize when adjustments are necessary and the courage to make them. So, I’m taking this time to recalibrate, strengthen the foundation, refine the systems, develop the team, and reposition Keio’s Kitchen for long-term success. Because my commitment has always been bigger than simply opening the doors each day—it’s about building something lasting, impactful, and truly special for this community.
This is not the end of the story. This is preparation for the next chapter.
