…I know. That’s a heavy sentence.

But if you’ve been around Polaris for a while, you know this café has always been about more than coffee.

Before there was Polaris, there was my dad.

He came to America with a dream of opening a restaurant. He poured everything he had into it, opening not one, but two Chinese restaurants. Both failed.

Not because the food wasn’t good—he’s one of the best cooks I know—but because he was trying to build a business in a country where he didn’t know the language or the culture.

Still, he never stopped believing in what mattered most: feeding people.

He always said the best part wasn’t the food itself. It was watching people leave happier than when they walked in.

Then, in 2015, he was in an accident that left him paralyzed.

For a while, it felt like his dream ended there.

But the more I sat with it, the more I realized something…

He had lost the use of his body, but he hadn’t lost everything else.

He still had decades of experience. He still had an incredible sense of hospitality. He still knew how to build a place where people felt cared for.

The only problem?

I didn’t dream about opening a Chinese restaurant.

I dreamed about coffee. Matcha. Beautiful cafés. Spaces where people wanted to gather.

So instead of choosing one dream over the other…

We built both.

Polaris became his heart and my vision.

His passion for feeding people, mixed with my love for coffee.

That’s why our promise has always been simple:

Leave people better than when they came in.

That isn’t a marketing slogan.

It’s something my dad taught me long before Polaris ever existed.

And every person who walks through our doors is helping carry his dream forward.
