This is how my Thanksgiving Turkey rolls. Separate the leg, wings, breast and back bone. Bone out legs and thighs, marinate them overnight in olive oil, onions, garlic and herbs. Roast bones and mirepoix and make stock. This is all done the day before thanksgiving. Next day thicken stock for gravy. Brown tied rolled boneless legs than braise with gravy until tender. Meanwhile breast is roasting while legs are resting. It a little more work up front but makes your thanksgiving day a lot easier and very impressive when it’s served.
