You've never seen anyone thirstier than a Swiftfired Pizza Chef coming in for their post-work beer after working in the trailer on a hot day. The thing about wood fired pizza is that it involves a big wood fire oven. In our case, that oven is housed in a little trailer. Which is why we make a habit of bowing to the AC unit before and after every shift, as a sign of respect.
