Northwoods Cooking with Jim This is a page tied in to my cooking blog. I specialize is easy foods that taste great. Also using gr I like to cook and try new things.

Any recipe I find I make my own by tweaking it for my taste. They are recipes, not laws. lol

Using a smoker and grill are my specialties, but I can work my way around the kitchen and campfire too. My goal is to share recipes, tips, and tricks so others who are not confident in the kitchen can expand their horizons. I know a lot of men do not cook much, or only do a few things. Hopefully this page

and the site will get you to a new level. For those wanting to try new things, this will be great for you. For beginners, these are pretty simple recipes to follow. My recipes might not be "healthy", and a few are gluten free. Taste and satisfaction is the key. Gyro Nachos.

1 lb ground lamb
1 lb ground beef.
Greek seasoning (premixed. Or fennel, garlic, cu**in, salt, pepper, etc)
Chopped fresh spinach
Feta cheese
Mozzarella shreds.
Tortilla chips
Sliced olives. Green or black.

Tzeke sauce:
1 cucumber. Put in food processor to chop fine. Put in strainer to rid extra water.

1 c Ranch dressing. Cucumber is best.
1 c mayo
2 teaspoon of seasoning
Salt and Pepper
Strained cucumber.
Mix well. Refrigerator for an hour to meld flavors.

Brown meats together. Add tablespoon of seasoning. Drain and set aside.

Chips on baking sheet. Add meat, olives, spinach, cheese.

Bake at 350F for 12-15 minutes.

Serve with hummus and Tzeke .

Superbowl wings II

Mustard wings in the air fryer.

4 lbs wing sections. Discard tips. Pat dry. Season with salt, pepper, garlic powder, poultry seasoning. Put in air fryer or oven while mixing glaze.

Glaze:
1/2 c Dijon mustard
1/2 c stone ground mustard
1/2 c yellow mustard
1/2 c honey
1/2 c brown sugar (to taste)
2 tbs rice vinegar
2 cloves minced garlic
Salt, pepper

Mix all in a bowl and set aside.

Cook wings in fryer (or oven) until starting to brown slightly. Slather on glaze and finish cooking.

Or some prefer cook wings fully, and put on glaze before eating.

Dip: my favorite is lime cilantro I use with jerk wings (see older post). Or each, blue cheese, your favorite.

Superbowl wings!!!

Lime Jerk wings.

Glaze:
1/4 c brown sugar
3 scallions or green onion
4 tsp jerk seasoning.
4 Clove's garlic
1 tbsp ginger

Mix in processor. When creamy, add 1/4 c olive oil, 1 tbsp lime zest, and 2 tbsp lime juice. Then mix more.

Dip: 1 c sour cream
1/2c Ranch dressing
1 tsp lime zest
1 tbsp lime juice
1 tsp salt

Mix well and refrigerate

Bake wings at 400F. Before done brush on glaze. Bake a little more, turn and glaze other size.

Mind blown!

No knife skills? Hate skinning fish? No good filet knife?

Pour hot water over the skin. Let set 25 seconds. Peel it off.

Worth repeating

A couple quick ham glazes for your Christmas ham.

1) A variation of Maple Bourbon wing glaze:
1/2 cup bourbon
3/4 cup maple syrup
1 tbsp butter
2 tbsp tomato paste
A pinch of Rosemary
1/2 tsp black pepper

In a sauce pan, melt the butter, add in the other items. Bring to a slow boil to reduce slightly. Baste ham frequently while in the oven. You can reduce the sauce more to have a thicker glaze just before you remove the ham from the oven.

2) Citrus and spice glaze
1 cup orange juice
1/2 tsp ground cloves
1/2 tsp cinnamon
1/2 c light corn syrup
2 tbsp butter
3/4 c brown sugar

Place all in a sauce pan, and bring to a slow boil to reduce slightly. Baste your ham often while baking. You can also reduce more for a thicker glaze upon finishing the ham.

3) Cranberry Glaze
2 c fresh cranberries
1 c sugar
2 tbsp orange zest (1/2 orange juice also works)
1/2 tsp ground cinnamon
3 c water

Place water and cranberries in sauce pan and bring to boil. (they will pop open) Stir to help break them up. When all berries seem to be popped open, add other ingredients.

Keep at a slow boil to reduce to desired thickness. Baste your ham accordingly. (If you reduce more, this also makes a nice syrup for pancakes)
