I've been so far into the exotic coffee lately: Geeisha, Pacamara, and Alta Maya. Forgetting how good Costa Rica Rubies are in the cup.
Last night, I roasted a couple of pounds of Costa because we were getting exceptionally low on coffee stores at home. I chose Costa Rican because it was the closest copy to the road. I had to look back at my files for the roasting profile. We roast her coffee in this sweet spot of each bean, not just say standard roast. It does take some trial and error, but it is well worth the effort. Once you have the profile locked in and you buy your beans from the same farm every year you get an excellent cup
and what a experience this morning was an opening of my eyes. This Costa Rican Ruby‘s is an amazingly good Coffee. I’ve just been off an adventure of the exotics, which I think sometimes gets just too much hype. These Costa Rican beans are extraordinary good no matter how much a coffee snob you are . These are just amazing. What a great way to start the day.
