Great crust and crumb texture. Not a crazy open crumb which will make for great grilled cheese sandwiches 🥪 🧀 🤤

Hello fam! It’s been a minute!
So I found myself with some extra time and decided I would try my hand at making Sourdough Viennoiserie (Croissants and Pain au Chocolat). (Disclaimer: I did cheat a little and used a little bit of commercial instant yeast to help the process along)
I am huge fan of croissants but have always been a little intimidated by the process. But finally got up the nerve to try it and I’m so glad I did.
It was definitely a good challenge but I’m fairly happy with the results, specially for a first timer. So much more to learn in this world of laminated doughs 🤯. But I think I might like it.
Stay tuned for some more downtime creations.

OFFICIAL ANNOUNCEMENT:
Starting September 16th I (Ozzie) will be starting a new adventure in Phoenix, AZ. I have accepted a position as Store Manager for . I will be managing a location within the (Sky Harbor International Airport).
Unfortunately that does mean I will not be taking anymore bread or cold brew orders...for a while. I am not sure how long that while may be. But if I have learned one thing about this Vision is that it has a tendency of reemerging in one way or another.
THANK YOU to all of you who have supported our Vision throughout the years and in every stage. I will miss our community of coffee and baking creatives. You all have become more than customers and industry peers BUT more like a family. I will greatly miss our special community But I am excited to share our community with a new city. ❤️

is putting on the Imperial Valley’s First Thursday Night Throwdown (TNT) .
A TNT is friendly latte art competition between local baristas and coffee enthusiasts for the purpose of encouraging community and networking. But there are also some cool prizes for the top 3 finishers. 👍🏽
Plus, there will local art on display by and other local vendors set up (TBA leading up to Night).

Another great coffee from my friends .
Ethiopia 🇪🇹(Yirgacheffe Chelelektu)Natural ... no surprise there. Very balanced cup but still alive with berry jam flavors and a brightness of a lemon curd. Excellent cup for anytime of day or any occasion.
