Our gaucho head chef assured us that blue cheese and parmesan were the very best flavors to pair with sirloin. We tried it, and WOW! We were instantly convinced, and so launched a whole month of celebrating cheesy pairings to all our favorite dishes. We have so much to try, but only for a couple more weeks.
