Headwaters serves blue catfish, which is an invasive fish in the Chesapeake Bay that is a voracious, opportunistic apex predator that consumes up to 9% of their body weight daily. They eat native fish, valuable crustaceans, mollusks, and occasionally plant matter. If you haven't already, try blue catfish at Headwaters! It is a delicious, delicate white meat and we serve it in a variety of ways: tacos, parm-encrusted & baked, on a sandwich, and fried.
