Our friend, legendary Lehigh Valley Chef Paolo Nota, has graciously shared his famous Pumpkin Ravioli recipe with Elpedio’s Ristorante.
This renown recipe has deep roots in the Lehigh Valley restaurant scene, created & perfected by Chef Paolo. It features raviolis stuffed with a special pumpkin mixture, sauteed with Red potatoes, green beans, sausage, seasonal apples, fresh basil, in a brandy cream sauce with a pinch of curry sprinkled with crushed Amaretti cookies!

About Us: We are a small, quality-focused restaurant that prides itself on authentic cuisine, teamwork, and tradition. Our kitchen works in direct consultation with legendary Chef Paolo Nota.
Position Details:
    •    Duties include line cooking, food preparation, and general kitchen support.
    •    Maintain cleanliness, organization, and food quality standards.
    •    Work collaboratively in a fast-paced, small-team environment.
Qualifications:
    •    Hardworking, dependable, and punctual.
    •    Previous kitchen / line experience preferred.
    •    We will also consider candidates with limited experience who demonstrate a genuine passion for cooking and a strong willingness to learn.
Compensation: Negotiable based on experience.

Aren’t they beauties! Just got off the boat and back from the shore 😂!
These fresh, “dry” scallops are from Massachusetts today. Unlike many restaurants, at Elpedio’s we only use fresh products, not frozen. 🥶 Chef Paolo advised us to use the BEST products for our menu, so make reservations to try these babies out!
