Brunch idea: cheese fries with a fried egg

What do you think? Maybe add some smoked pork or briscuit?
My other issue is the time to make it. I have noticed that wait time on some trucks is ridiculous and time management is very important to me. This takes about 5 minutes to make, would you be willing to wait at least that long for something like this? Remember, this would strictly be on a weekend brunch menu.

This will be the closest thing that I will have to a taco. Not that tacos aren't great, but I am trying to stay away from cliche menu items.

Working on a beer batter fish recipe. I found this beer that looks like it fits the Happy Hippie frame of mind, and bonus points for being brewed in Texas! I know we have some local breweries (Tyler/ Longview), any suggestions for a different brew to try?

I am experimenting with bagel dough today. I decided against adding any toppings or mix-ins on the first batch and concentrate on texture, because that is truly the most important part of the bagel.
I am curious, though, about what your favorite kind of bagel is and what is your favorite thing to have on it?

I decided to go ahead and announce a tentative premier date for The Happy Hippie. I am going to shoot for Wednesday, March 20, 2019. That will be the first day of spring 2019.
I decided to go ahead and create this page to hold myself accountable and allow you guys to keep up with the progress.
