Sultans tried to ban this coffee.
It outlived the empire.

I make it every day, right here, on sand.

Let me tell you why.

In the 1500s, coffee reached Istanbul.
Coffeehouses opened everywhere.
People gathered. Talked. Argued. Dreamed.

The rulers got nervous.
Some tried to shut it all down.

They failed.

Because this was never just a drink.
It was a way of saying "sit with me."

Families served it to welcome guests.
To make peace.
Even to ask for a daughter's hand.

There's an old saying:
"One cup of coffee commits you to 40 years of friendship."

I believe that.

[One line from the owner: where he first had it, who made it for him, or why he opened this place.]

That's why I don't use a machine.
No button.
No rushing.

Just a copper cezve
buried in hot sand.

The heat comes up slow and even.
Never burnt.
Never bitter.

Thick, rich, with a soft foam on top.

It takes a few minutes.
I'll never apologize for that.

When you walk into Indiana Sweets Cafe Crepe and Knafe,
you're not a customer in a line.
You're a guest at my table.

Come watch me make your cup.
Then stay for warm knafe
and a fresh crepe.

So tell me:

What's the best cup of coffee you've ever had?

Who did you share it with?

Would you wait a few minutes for a cup made like this?
