A sake flight with range 🍶✨ October’s lineup starts polished and fruit-forward with Dassai 45 Junmai Daiginjo, moves into the floral, fragrant Dewazakura “Cherry Bouquet” Ginjo, and finishes rich and earthy with Kurosawa Kimoto “Black Marsh” Junmai Kimoto.

We first met Chef Satoshi Katakura () over dinner at his izakaya, Hiro, during a trip to Tokyo in 2014. One great meal turned into a great friendship 🫶🏼



Satoshi first came to Durham in 2016 for an omakase collaboration, and we've been cooking together ever since. We've spent time in each other's kitchens, explored farms and markets, and learned a lot from one another along the way.



Now he's heading back to Durham for his eighth collaboration with Dashi! ❤️ Every visit means a brand new menu, inspired by everything we've shared over the years. Join us for this special annual tradition!!
