Made the 'Classic' Mr. C Eggplant Parmigiana for the first time in years! It was fabulous! The Eggplants down here are incredibly large and succulent! Here, Here, Mr. C! I put it in a frying pan with some good thick red sauce and a slice of provolone on top and it came up great! (Remember the 'Eggplant Man' who had to have his fried and not baked in a dish?!)

Hi all! Mr. C is in rehab right now due to some fluid retention in his legs. He should be fine by the big "100" I'll keep everyone updated but for now, we're still planning on 4/13 at his favorite Chinese restaurant, China Buffet on Mayfair St in Durham. The man can eat some Chinese - typically has 4-5 plates!!
